Seared Salmon with Bacon-Wrapped Asparagus & Apple Arugula Salad

October 1, 2026

This is the kind of plate that looks like it took effort but comes together in under twenty minutes. The salmon goes straight into a hot HexClad pan — skin side up first, then turned skin side down — and the bacon-wrapped asparagus sears in the same pan while the salmon rests. Everything is done at the same time, and the whole kitchen smells incredible.

The salad is simple on purpose. Romaine for crunch, arugula for a little bitterness, spring onions for a gentle sharpness, a crisp apple for sweetness, and roasted salted sunflower seeds for texture. The dressing is just olive oil, white vinegar, salt, and freshly cracked pepper — clean and sharp, exactly what the richness of the salmon needs.

What you'll need

  • 1 salmon fillet, skin on
  • 4–5 asparagus spears
  • 2–3 rashers of streaky bacon
  • 2 large handfuls of romaine lettuce, roughly torn
  • 1 large handful of arugula (rocket)
  • ½ crisp apple, thinly sliced
  • 2–3 spring onions, thinly sliced
  • 2 tbsp roasted salted sunflower seeds
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • Salt and freshly cracked black pepper

How to make it

  1. 1

Wash the asparagus, spring onions, apple, romaine, and arugula using the PurePod — fill a bowl with water, add the produce, drop in the PurePod, and let it run. Pat dry.

  2. 2

Wrap each asparagus spear tightly with a rasher of bacon, starting at the base and spiralling up.

  3. 3

Season the salmon fillet generously on both sides with salt and freshly cracked pepper.

  4. 4

Heat the HexClad frying pan over medium-high heat until hot. Add a small drizzle of olive oil.

  5. 5

Place the salmon skin-side up first. Sear for 2–3 minutes, then turn skin-side down. Press gently for the first 30 seconds to prevent curling and sear for a further 4–5 minutes.

  6. 6

Add the bacon-wrapped asparagus to the same pan alongside the salmon. Turn the asparagus every 1–2 minutes until the bacon is golden and crisp, about 6–8 minutes total.

  7. 7

Cook until just cooked through with a slightly translucent centre. Remove and rest.

  8. 8

While the salmon rests, build the salad: toss the romaine, arugula, apple slices, and spring onions together.

  9. 9

Whisk the olive oil and white wine vinegar with a pinch of salt and pepper. Dress the salad lightly.

  10. 10

Plate the salad, lay the salmon on top, arrange the bacon-wrapped asparagus alongside, and scatter the sunflower seeds over everything.

  11. 11

Finish with a final crack of black pepper and serve immediately.

Why it works

  • Omega-3 rich salmon: Wild salmon is one of the best dietary sources of omega-3 fatty acids — anti-inflammatory, heart-protective, and essential for brain health.
  • Asparagus: A natural prebiotic that feeds beneficial gut bacteria. Rich in folate, vitamins K and C, and a gentle diuretic that supports kidney function.
  • Arugula: Peppery and nutrient-dense — high in vitamin K, calcium, and glucosinolates that support liver detoxification.
  • Apple: Adds natural sweetness and a hit of soluble fibre. The quercetin in apple skin is a potent antioxidant and anti-inflammatory.
  • Sunflower seeds: A good source of vitamin E, magnesium, and healthy fats. The roasted salted variety adds crunch and a savoury depth that ties the whole salad together.
