Coconut Chia Pudding

August 18, 2026

Chia pudding is one of those recipes that rewards almost no effort. You stir everything together before bed, and breakfast is waiting for you in the morning — thick, creamy, and genuinely filling. The chia seeds do all the work overnight, absorbing the coconut milk and swelling into a pudding-like texture that holds together beautifully.

I use Bob's Red Mill organic whole chia seeds because the quality is consistent and I trust exactly what I'm getting. Full-fat coconut milk gives the richest result, but homemade oat milk is a beautiful alternative — lighter, naturally sweet, and it lets the chia texture come through more clearly. Any milk works here; the pudding will just have a slightly different flavour depending on what you use.

The coconut flakes and raisins go in overnight with everything else. By morning they've softened into the pudding — the raisins plump up in the honey and milk and add a gentle natural sweetness throughout, while the coconut flakes melt into the texture. If you want to make it look a little more special before serving, a few extra coconut flakes and some fresh fruit or berries on top is all it needs.

What you'll need

  • 3 tablespoons Bob's Red Mill Organic Whole Chia Seeds
  • 1 cup full-fat coconut milk, homemade oat milk, or your preferred milk
  • 1–2 teaspoons raw honey
  • A small handful of Bob's Red Mill Unsweetened Coconut Flakes
  • A small handful of Sun-Maid Organic Sun-Dried Raisins
  • Fresh fruit or berries to decorate before serving — optional, but lovely
  • Simply Organic Ground Cinnamon, Ground Ginger, or Pure Ground Nutmeg — optional, for a warm finishing touch

How to make it

  1. 1

Add the chia seeds to a wide-mouth jar.

  2. 2

Pour in the coconut milk and stir in the honey.

  3. 3

Add the coconut flakes and raisins and stir everything together well — make sure no chia seeds are clumped at the bottom.

  4. 4

Let it sit for 10 minutes, then stir once more to break up any clumps.

  5. 5

Cover and refrigerate overnight. The coconut flakes and raisins will soften into the pudding as it sets.

  6. 6

When ready to serve, decorate with a few extra coconut flakes and fresh fruit or berries if you like.
