Grass-Fed Beef Filet Dinner

August 24, 2026

This is the kind of dinner I make when I want something that feels like a real meal but does not take over the evening. Grass-fed beef filets are naturally lean and full of flavour — they do not need much. A good season, a hot pan, and a proper rest is all it takes.

The charred bell pepper alongside is one of my favourite things. High heat, a little patience, and it goes from raw to soft and slightly smoky in minutes. A drizzle of olive oil and a pinch of salt and garlic powder at the end and it is done.

The salad dressing is simple but it works beautifully with the beef — the white wine vinegar cuts through the richness, the truffle oil adds depth, and the Italian seasoning ties it all together. Fresh cilantro on top gives the whole plate a brightness that I really love.

If you feel like a little extra luxury and do not mind the extra calories, the seasoned butter melting over the filets on the plate is worth every bit of it. The recipe for that is coming separately — it is one of those small things that elevates the whole dinner.

What you'll need

  • Grass-fed beef loin filets — about ½ pound per person, 1 inch thick
  • Natierra Himalania Himalayan Fine Pink Salt — for the filets, the pepper, and the salad
  • Freshly ground black pepper — to taste
  • Garlic powder — to taste
  • Red bell pepper — 1 per person, halved or quartered
  • A drizzle of olive oil — for the bell pepper
  • Fresh organic romaine lettuce — torn or roughly chopped
  • English cucumber — diced
  • Fresh cilantro — a handful, roughly torn
  • Madhāva Organic White Wine Vinegar — a generous splash over the salad
  • TRUFF Black or White Truffle Oil — drizzled over the salad
  • Italian seasoning — a pinch over the salad
  • Seasoned butter — optional, for finishing the filets on the plate (see the Simple Seasoned Butter recipe)

How to make it

  1. 1

Take the filets out of the fridge about 20 minutes before cooking so they come closer to room temperature.

  2. 2

Season both sides generously with Natierra Himalania Himalayan Fine Pink Salt, freshly ground black pepper, and garlic powder.

  3. 3

Heat a pan until very hot. Sear the filets on both sides to get a good crust — do not move them while they are searing.

  4. 4

Lower the heat and continue cooking to your preferred doneness. Use a meat thermometer if you like: 130°F for medium-rare, 140°F for medium.

  5. 5

Transfer the filets to a warm plate and cover with a pan lid. Let them rest for about 10 minutes — this is what keeps them juicy.

  6. 6

While the filets rest, char the bell pepper halves in a clean pan on high heat until they get good colour on the skin side.

  7. 7

Lower the heat and let the pepper soften for a few minutes. While still on the heat, season with Natierra Himalania Himalayan Fine Pink Salt, garlic powder, and a drizzle of olive oil.

  8. 8

Arrange the romaine, cucumber, and cilantro on the plate. Dress with white wine vinegar, truffle oil, a pinch of Natierra Himalania Himalayan Fine Pink Salt, and Italian seasoning.

  9. 9

Plate the filets alongside the pepper and salad. If you are adding seasoned butter, place it on top of the filets now and let it melt.

  10. 10

Enjoy your extra time and your meal.
