Quick Chicken Burrito

September 29, 2026

This is the kind of lunch I make when I want something that feels like a proper meal but I do not want to spend the afternoon in the kitchen. Fifteen minutes from fridge to table, and it looks like considerably more effort than that.

The Parmesan is not optional. I know it sounds like an unusual choice for a burrito, but fine-grated Parmesan over warm chicken is one of those combinations that just works — it melts slightly, adds a salty depth, and makes the whole thing feel finished. Use a microplane if you have one.

If you are in a time crunch, this is the meal to reach for. Everything comes together in one pan and one board — no complicated prep, no long ingredient list, nothing that needs to simmer for an hour. And it scales up beautifully. Just add more chicken breasts and tortillas depending on how many you are and how many burritos each person normally eats. The rest of the toppings stretch easily across a bigger batch.

The recipe, step by step

Pan-fried chicken pieces golden and cooked through
Golden pan-fried chicken, seasoned simply with salt and pepper
Smashed avocado, shallot rings, and chunked heirloom tomato
Fresh toppings ready to layer into the burrito
Whole grain tortilla layered with fresh romaine
Layer the crisp romaine onto the warm tortilla

What you'll need

  • 2 chicken breasts, cut into bite-sized pieces
  • Himalayan pink salt and freshly ground black pepper
  • 1 head romaine lettuce, washed and torn into pieces
  • 1 heirloom tomato, cut into rough chunks
  • ½ shallot, sliced paper-thin
  • 1 ripe avocado, smashed with a squeeze of lime and a pinch of Himalayan salt
  • 4 whole grain tortillas
  • Fine-grained Parmesan, freshly grated — as much as you like

How to make it

  1. 1

Cut the chicken breasts into bite-sized pieces. Season generously with Himalayan salt and black pepper.

  2. 2

Heat a pan over medium-high heat. Add a little oil and fry the chicken pieces for 6–8 minutes, turning occasionally, until golden on the outside and cooked through. Set aside.

  3. 3

While the chicken cooks, wash and tear the romaine into pieces. Cut the heirloom tomato into rough chunks. Slice the shallot as thinly as you can — almost translucent.

  4. 4

Halve the avocado, remove the stone, and scoop the flesh into a bowl. Add a good squeeze of lime and a pinch of Himalayan salt. Smash with a fork — you want it rough and textured, not smooth.

  5. 5

Warm the tortillas in a dry pan for 30 seconds each side, or wrap them in a damp cloth and microwave for 20 seconds.

  6. 6

To assemble: lay a tortilla flat, spread a generous spoonful of smashed avocado across the centre, layer on the romaine, chicken pieces, tomato, and shallot. Finish with a heavy grating of Parmesan. Fold and serve immediately.

Why it works

  • Chicken breast: One of the leanest sources of complete protein available. Two breasts across four servings gives you roughly 30 g of protein per burrito — enough to keep you full and support muscle repair without a heavy calorie load.
  • Avocado: Rich in monounsaturated fats, potassium, and folate. The fat in avocado helps your body absorb the fat-soluble vitamins from the romaine and tomato, so it is doing more than just tasting good.
  • Romaine lettuce: Romaine is one of the more nutritious lettuces — higher in vitamins A, C, and K than iceberg, with a satisfying crunch that holds up against warm fillings without wilting immediately.
  • Whole grain tortilla: Whole grain wraps provide more fibre and a lower glycaemic response than white flour tortillas, which means steadier energy and longer satiety.
