Overnight Chia Jar

October 6, 2026

This is the kind of thing you make without thinking about it. A jar, a few spoonfuls of things you already have, organic milk to fill it up, and a night in the fridge. The chia seeds do all the work — they absorb the milk slowly and swell into a thick, pudding-like texture that holds the raisins and goji berries and coconut flakes together beautifully.

The goji berries are what make this feel a little different from a standard chia pudding. They soften overnight and add a gentle tartness that cuts through the sweetness of the honey and raisins. The coconut flakes melt into the texture and add a quiet richness. It is filling, it is genuinely good, and it takes about three minutes to put together the night before.

I use organic whole milk here because the fat content gives the chia the best texture — creamy and thick rather than watery. Use whatever milk you prefer, but whole milk is worth it if you have it.

The recipe, step by step

Two empty glass clip-top jars with chia seeds measured out, and a measuring spoon alongside
Start with 2 tablespoons of chia seeds per jar
Glass jars with chia seeds and raisins layered inside, measuring spoon resting beside them
Add the raisins — they plump up beautifully overnight
Jars with chia seeds, raisins, and bright red goji berries layered on top
Goji berries next — they soften and add a gentle tartness
Jars with all dry ingredients including coconut flakes and honey drizzled on top, viewed from above
Coconut flakes and honey — then fill with organic milk
Jars filled with milk and all ingredients, viewed from above before stirring
Fill to the top with organic milk and stir well
Jars after stirring with a gold spoon — milk and chia seeds and goji berries fully combined
Stir again after 5 minutes, then close and refrigerate overnight

What you'll need

  • 2 tablespoons Bob's Red Mill Organic Whole Chia Seeds
  • 1 tablespoon Sun-Maid Organic Sun-Dried Raisins
  • 1 tablespoon goji berries
  • 1 tablespoon Bob's Red Mill Unsweetened Coconut Flakes
  • 1–2 teaspoons raw honey
  • Organic whole milk — enough to fill the jar

How to make it

  1. 1

Add the chia seeds to a small jar.

  2. 2

Add the raisins, goji berries, coconut flakes, and honey.

  3. 3

Fill the jar with organic milk and stir everything together well.

  4. 4

Let it sit for 5 minutes, then stir again to break up any clumps of chia.

  5. 5

Cover and refrigerate overnight. The chia will absorb the milk and set into a thick, creamy texture.

  6. 6

Eat straight from the jar in the morning — no prep needed.

Why it works

  • Chia seeds: One of the most concentrated plant sources of omega-3 fatty acids, chia seeds are also high in soluble fibre, which absorbs liquid and forms a gel — the mechanism behind the pudding texture. They support digestive health, slow glucose absorption, and provide sustained energy without a blood sugar spike.
  • Goji berries: Rich in antioxidants, particularly zeaxanthin, which supports eye health. Goji berries also contain polysaccharides that support immune function and provide a small amount of complete protein — unusual for a fruit.
  • Coconut flakes: A source of medium-chain triglycerides, which are metabolised differently to long-chain fats — used more readily for energy rather than stored. They add richness and a quiet natural sweetness.
  • Raw honey: Unprocessed honey retains enzymes, antioxidants, and trace minerals that are destroyed by heat. It provides natural sweetness with a lower glycaemic impact than refined sugar, and has mild antimicrobial properties.
