Power of the Earth in a Glass

September 18, 2026

This one started as a question — what would happen if you took everything green and good and blended it into something that actually looked as alive as it tastes? The answer is this. A deep, vivid green base built on whole lemon, lime, spinach, and matcha, topped with a cloud of blue spirulina foam that sits on the surface and slowly sinks into the green below.

The two layers do not stay perfectly separate — they are not meant to. The blue bleeds into the green at the edges and the result looks like the earth seen from above. Oceans meeting land. It is one of those drinks that makes you stop before you drink it, just to look at it.

The rapeseed oil goes in with the green base. It sounds unusual in a smoothie but it rounds out the flavour, helps your body absorb the fat-soluble vitamins from the spinach and matcha, and gives the whole thing a subtle richness that makes it feel more like a meal than a juice.

What you'll need

  • 1 whole seedless lemon — including peel
  • 1 lime — peeled
  • 1 cup freshly pressed orange juice
  • 2 cups baby spinach
  • 1½ teaspoons matcha powder
  • 2 generous spoonfuls of raw honey
  • A pinch of Himalayan pink salt
  • Ice, to taste
  • 1 teaspoon cold-pressed rapeseed oil
  • For the blue foam: 150–200 ml Oatly Barista oat milk (or homemade oat milk)
  • 2 teaspoons blue spirulina powder

How to make it

  1. 1

Add the whole seedless lemon (peel and all), peeled lime, orange juice, baby spinach, matcha, honey, Himalayan pink salt, rapeseed oil, and ice to your blender.

  2. 2

Blend on the smoothie setting. Run the cycle twice — or keep going until the mixture is completely smooth and deeply green. The double blend is what gives it that silky, airy texture.

  3. 3

While the green base is blending, make the blue foam. Stir the blue spirulina powder into the cold oat milk until fully dissolved.

  4. 4

Use the Nespresso Aeroccino on the cold froth setting to whip the blue oat milk into a light, airy foam.

  5. 5

Pour the green smoothie into your glasses, filling them about two-thirds of the way.

  6. 6

Spoon half the blue foam gently over the green — let it settle and begin to sink into the surface.

  7. 7

Pour the remaining foam slowly over the top and let it find its own level. The blue and green will divide and blend at the edges, creating that layered earth-from-above effect. Serve immediately.

Why it works

  • Baby spinach: Two cups of baby spinach is a serious nutritional contribution. Spinach is one of the most nutrient-dense leafy greens available — rich in iron, folate, magnesium, vitamin K, and vitamin C. The iron supports red blood cell production and oxygen transport; the folate supports DNA repair and healthy cell division; the magnesium is involved in over 300 enzymatic reactions in the body, including muscle function, blood sugar regulation, and sleep quality. The vitamin C in the lemon and orange juice in this recipe significantly improves the absorption of the non-haem iron from the spinach, making this combination particularly effective.
  • Matcha: Matcha is powdered whole green tea leaf, which means you consume the entire leaf rather than a steeped extract. It contains L-theanine — an amino acid that promotes calm, focused alertness without the jitteriness associated with coffee. The caffeine in matcha is released more slowly than in coffee, producing a sustained lift rather than a spike and crash. Matcha is also exceptionally rich in catechins, particularly EGCG, which is one of the most studied antioxidant compounds in the human diet. These catechins support cardiovascular health, help regulate blood sugar, and have well-documented anti-inflammatory properties.
  • Blue spirulina: Blue spirulina is the phycocyanin extract from spirulina — the vivid blue-green pigment that gives this foam its extraordinary colour. Phycocyanin is a potent antioxidant and anti-inflammatory compound that has been studied for its ability to neutralise free radicals and reduce oxidative stress. Unlike green spirulina, the blue extract has a neutral flavour, which means it colours the foam without adding any of the earthy taste associated with the whole algae. It is also rich in protein and B vitamins, and supports liver function and immune response.
  • Whole lemon and lime: Using the whole seedless lemon — peel and all — means you get the vitamin C from the juice and the flavonoids and aromatic oils concentrated in the pith and zest. Limonene, found in the peel, has well-documented antioxidant and anti-inflammatory properties. The lime adds a second hit of vitamin C and a sharper, more aromatic citrus note that lifts the entire flavour of the green base. Together, the two citrus fruits also significantly improve the absorption of the iron from the spinach.
  • Cold-pressed rapeseed oil: A teaspoon of cold-pressed rapeseed oil in a smoothie is not a common choice, but it is a considered one. Spinach and matcha both contain fat-soluble vitamins — particularly vitamin K and the carotenoids lutein and zeaxanthin — that your body can only absorb in the presence of dietary fat. Adding rapeseed oil to the blend ensures you actually absorb what you are drinking. Rapeseed oil is also one of the best plant sources of omega-3 fatty acids and has a favourable omega-6 to omega-3 ratio, which supports cardiovascular health and reduces systemic inflammation.
  • Raw honey: Two spoonfuls of raw honey sweeten this smoothie without refined sugar. Raw honey retains its natural enzymes, antioxidants, and antimicrobial compounds — particularly if you use a high-quality Manuka or unfiltered wildflower honey. It provides a gentle, sustained energy release alongside the natural sugars in the fruit, and its prebiotic properties support the beneficial bacteria in your gut. The flavour of good raw honey also adds a floral depth that processed sweeteners simply cannot replicate.
