Stir and blend the dry mix until it is fully combined.

Take your quarter portion of homemade butter and work the sugar blend in with a fork. Taste as you go. If you want it more cinnamon-forward, add more of the dry mix. If you want it more buttery, hold back. There is no wrong answer — it is yours. Spoon it into a jar, and it is ready to serve. The cream will collapse suddenly — the fat globules break apart from the buttermilk and you will hear the liquid sloshing in the bowl. That is the moment. Stop the machine, use a spatula to gather everything back to the centre, then run it again at a higher speed until the butter is fully solid and the buttermilk has separated completely.

Pour the butter and the liquid over a cheesecloth set over a bowl and let it drain. Then rinse the butter in cold or ice water — two or three times, working it gently with your hands each time, until the water runs completely clear. How to make it

Pour the heavy whipping cream into the KitchenAid bowl. Fit the whisk attachment.

Start on medium speed. After a minute or two, add a pinch of Himalayan salt. Stop and taste — add more if you want it saltier. The salt draws out moisture and helps the butter keep.

Keep whipping past stiff peaks. The cream will suddenly collapse and you will hear liquid sloshing — the fat has broken from the buttermilk. Stop the machine.

Use a spatula to gather everything back to the centre of the bowl. Run the machine again at a higher speed until the butter is fully solid and the buttermilk has separated completely.

Pour the butter and buttermilk over a cheesecloth set over a bowl. Let it drain completely.

Rinse the butter in cold or ice water 2–3 times, working it gently with your hands each time, until the water runs completely clear. This is the step that lets you store it safely on the counter. Once rinsed, strain it again — ideally over a fresh piece of cheesecloth — gather the cloth and squeeze out every last bit of liquid. A clean cheesecloth at this stage means less buttermilk left behind, and that is what keeps it.

Press out the last of the water. Shape it, store it in a butter dish on the counter, and use it immediately. Well rinsed, it keeps at room temperature.

Why it works

One ingredient, real food: Shop-bought butter often contains additives, stabilisers, or cream from unknown sources. When you make it yourself, you know exactly what went in — just cream and salt.

Counter storage is intentional: Well-rinsed, well-pressed butter does not need to be refrigerated. Keeping it at room temperature means it is always soft, always spreadable, and always ready — the way butter was kept for centuries before refrigeration.
The buttermilk is a bonus: The liquid that separates during churning is real cultured buttermilk — not the thickened commercial version. Use it in pancakes, baking, or salad dressings. Nothing goes to waste.

This one is built around what is already in the kitchen. A whole seedless lemon — peel and all — goes straight into the blender. The peel carries limonene and flavonoids that the juice alone does not, and with a seedless lemon there is nothing to pick out. The apple goes in almost entirely — just 2 or 3 thin slices saved for the rim of the glass, the rest blended in whole for body and natural sweetness. It is a small thing, but it makes the whole drink look considered.

Cold water is the liquid base here rather than juice — it keeps the calorie count clean and lets the lemon and apple do the work. The matcha gives it focus, the spinach gives it colour and iron, and the rapeseed oil carries the fat-soluble vitamins across. Fresh ginger adds anti-inflammatory warmth and sharpens the whole blend — scrape the skin with a spoon and slice it across the grain so it disappears completely. Ground cinnamon goes in with the blend and again on top of the foam, where it blooms in the first sip. The Himalayan salt and crushed chilli are the details that lift everything else. Do not skip either of them.

Blend it three or four times, stopping to scrape down between each pass. That is what gives you the fluffy, creamy texture rather than something that just tastes blended. Pour it into the glasses, then spoon the chilled Oatly Barista oat milk over the back of a spoon so it sits on top as a foam layer. Dust with cinnamon and serve immediately — this one does not sit well.

How to make it

If you do not have fresh ginger, half a teaspoon of ground ginger works well as a substitute.

Add the cold water to the blender first — the liquid goes in before everything else to give the blades something to work with.

Blend on high. Stop, scrape down the sides, and blend again. Repeat 3–4 times in total — this is what makes it fluffy and creamy rather than just smooth.

Pour into glasses. Spoon the chilled Oatly Barista oat milk over the back of a spoon in a slow, steady pour — it will sit on top of the smoothie as a foam layer. Dust generously with ground cinnamon. Fan the reserved lemon slices and the 2–3 apple slices over the rim of each glass. Serve immediately.

Why it works

Lemon (whole): Blending the whole seedless lemon — peel and all — gives you vitamin C, citric acid, and the limonene and flavonoids concentrated in the peel. Vitamin C significantly improves the absorption of non-haem iron from the spinach, and citric acid supports kidney health.
Apple: Apple provides natural sugars for quick energy, soluble fibre (pectin) for gut health, and quercetin — an antioxidant with anti-inflammatory properties. Spinach: Baby spinach is one of the most nutrient-dense greens you can add to a smoothie. It provides iron, folate, magnesium, and vitamins K and C — and it blends in completely, contributing colour and nutrition without any grassy flavour.
Matcha: Matcha provides L-theanine alongside its caffeine — a combination that gives you focused, calm energy rather than the spike and crash of coffee. It is also rich in EGCG, one of the most studied antioxidants in green tea, with well-documented anti-inflammatory and metabolic benefits.
Rapeseed oil: One tablespoon of cold-pressed rapeseed oil blends in completely and adds meaningful nutritional value. Rapeseed oil has one of the best omega-3 to omega-6 ratios of any cooking oil, and the fat it provides helps your body absorb the fat-soluble vitamins and antioxidants from the spinach and matcha.
Whey protein and creatine: Two scoops of whey protein and one scoop of creatine across the full batch. The whey adds around 40–50 grams of protein — roughly 13–17 grams per serving across three glasses. The creatine supports strength and recovery without changing the flavour at all. Together they make this genuinely functional as a post-workout drink or a high-protein breakfast.
Himalayan salt: A small amount of Himalayan pink salt provides trace minerals and electrolytes, and rounds out the sharpness of the citrus. It is a flavour detail as much as a nutritional one.
Honey: Raw honey provides natural sugars for quick energy alongside trace enzymes, antioxidants, and antimicrobial compounds. Two to three teaspoons across three servings is a modest amount — enough to balance the citrus without making the smoothie sweet.
Fresh ginger: Ginger is one of the most well-studied anti-inflammatory ingredients in the kitchen. The gingerols and shogaols it contains inhibit inflammatory pathways, support digestion, and add a gentle warmth that lifts the whole smoothie without overpowering the citrus or the matcha. A small thumb of fresh ginger — scraped and sliced across the grain — blends in completely. Ground ginger works as a substitute and is slightly more concentrated, so a half teaspoon is enough.
Cinnamon: Ground cinnamon supports blood sugar regulation by improving insulin sensitivity — which means the natural sugars from the honey and apple release more steadily rather than spiking. It is also rich in antioxidants and has mild anti-inflammatory properties. A quarter teaspoon in the blend is functional; the dusting over the foam is sensory — it blooms in the first sip and makes the whole glass smell like something considered.

The salad is simple on purpose. Romaine for crunch, arugula for a little bitterness, spring onions for a gentle sharpness, a crisp apple for sweetness, and roasted salted sunflower seeds for texture. The dressing is just olive oil, white vinegar, salt, and freshly cracked pepper — clean and sharp, exactly what the richness of the salmon needs.

What you'll need

1 salmon fillet, skin on
4–5 asparagus spears
2–3 rashers of streaky bacon
2 large handfuls of romaine lettuce, roughly torn
1 large handful of arugula (rocket)
½ crisp apple, thinly sliced
2–3 spring onions, thinly sliced
2 tbsp roasted salted sunflower seeds
2 tbsp extra virgin olive oil
1 tbsp white wine vinegar

How to make it

Two scoops of whey protein go straight into the batter with the whole wheat flour and eggs — no milk, no oil in the batter itself, just those three things and a pinch of salt. The result is a pancake that is denser and more golden than the classic version, with a slightly nutty edge from the wheat flour and enough protein to make it a proper meal.

The blueberries go on warm, so they soften just slightly under the maple syrup. The violas are the last thing on — placed fresh, right before you bring the plate to the table. They are edible, they are beautiful, and they make something simple look considered. That is the whole point.

Late Summer Dream

This one started as a note in my head — orange juice, banana, apple, lemon, pitaya, ginger. The kind of smoothie that sounds like it should be complicated but is not. Everything goes into the blender. One long blend. Pour into glasses.

The four teaspoons of pitaya is what makes it. Three gives you a soft rose. Four gives you something vivid and deep — the kind of colour that makes you want to photograph it before you drink it. The flowers on top are from the garden. Viola pansies and white alyssum. They are edible and they make it look exactly as beautiful as it tastes.

The protein and creatine are in there because this is also a training day smoothie. Two scoops of protein, one scoop of creatine, and it becomes something that carries you through a morning or a workout without needing anything else. The rapeseed oil is a teaspoon — you will not taste it, but it is there for the omega-3s and to help your body absorb everything else. Serves three to four. Drink it immediately.

What you'll need

1 cup (240 ml) organic orange juice
1 ripe banana
1 apple, cored and chopped — skin on
1 whole seedless lemon — peel and all
4 teaspoons pink pitaya (dragon fruit) powder
1 teaspoon ground ginger
Pinch of Himalayan pink salt
1 teaspoon raw honey
1 teaspoon cold-pressed rapeseed oil
2 scoops protein powder (vanilla whey or your preferred blend)
1 scoop creatine powder
Ice — a small handful if you like it cold
Edible viola pansies and white alyssum florets, to garnish

How to make it

Add the orange juice to the blender first — this gives the blades something to work with.

Add the banana, chopped apple (skin on), and whole seedless lemon — peel, pith, and all. The peel is where the flavonoids and aromatic oils live.

Add the pink pitaya powder, ground ginger, Himalayan pink salt, honey, rapeseed oil, protein powder, and creatine.

Add ice if you want it cold. Blend on high for at least 60 seconds until completely smooth — the apple skin and lemon peel need a full blend to break down properly.

Pour into glasses and garnish with fresh viola pansies and white alyssum florets. The flowers are edible and they make this look exactly as beautiful as it tastes.

Serves 3–4. Drink immediately — the colour is most vivid right after blending.

Why it works

Pink pitaya powder: Four teaspoons of pink pitaya gives this smoothie its deep, vivid rose colour — no food colouring, no tricks. Pink pitaya is rich in betacyanins, the plant pigments responsible for that colour, which are potent antioxidants that help neutralise free radicals and reduce oxidative stress. It also provides vitamin C, prebiotic fibre for gut health, and iron — the absorption of which is significantly improved by the vitamin C in the lemon and orange juice.
Whole seedless lemon: Blending the whole lemon — peel, pith, and all — means you get the vitamin C from the juice and the flavonoids, limonene, and fibre concentrated in the peel and pith. The citric acid supports kidney health and the limonene in the zest has well-documented antioxidant and anti-inflammatory properties. The vitamin C also significantly improves the absorption of iron from the pitaya powder.
Apple with skin: The skin is where most of the apple's polyphenols and quercetin live — anti-inflammatory compounds that support immune function and cardiovascular health. Keeping the skin on means you get the fibre and the phytonutrients together, which is how they work best.
Ground ginger: Ginger is one of the most well-studied anti-inflammatory ingredients in the kitchen. The gingerols and shogaols it contains inhibit inflammatory pathways, support digestion, and add a gentle warmth that lifts the whole smoothie without overpowering the fruit.
Protein powder: Two scoops of protein powder adds approximately 40–50 grams of protein to the full batch — around 12–16 grams per serving depending on your brand. Combined with the creatine, this makes the smoothie genuinely functional as a post-workout recovery drink or a high-protein breakfast that keeps you full.
Creatine: Creatine supports ATP regeneration in muscle cells, which means faster recovery and better performance in strength and endurance training. It is one of the most researched supplements in sports nutrition and it is completely tasteless in a smoothie — it disappears into the blend.
Cold-pressed rapeseed oil: One teaspoon of cold-pressed rapeseed oil blends in completely and adds meaningful nutritional value without changing the flavour. Matcha Citrus Protein Smoothie

Some mornings you want something that tastes like it is doing something. Not just sweet, not just cold — something with a bit of edge to it. Lemon and lime give you that. The citrus cuts through the banana and the spinach and the matcha in a way that wakes you up before the creatine even has a chance to.

I made this one for myself. The blender went in with the spinach first, then the lemon and lime — peeled, deseeded, no pith — then the banana, the orange juice, the oil, the salt, the honey, the protein, the creatine, and the matcha. One long blend. Two glasses. The vanilla oat milk foam on top is the part that makes it feel finished rather than functional.

It is green. Properly green. The kind of green that makes you feel like you have already done something right before the day has started. That is not nothing.

The recipe, step by step

What you'll need

1 lemon, peeled and deseeded
1 lime, peeled and deseeded
1 ripe banana
1 cup (240 ml) orange juice
1½ cups (45 g) fresh baby spinach
½ tablespoon rapeseed oil
A pinch of Himalayan pink salt
2 teaspoons raw honey
1 scoop whey protein powder
1 scoop creatine
1½ teaspoons ceremonial grade matcha
For the foam: ½ cup (120 ml) oat milk, cold-frothed
For the foam: 1 teaspoon vanilla powder, stirred in before frothing
To finish: a small handful of edible flowers

How to make it

Peel and deseed the lemon and lime. Remove as much of the white pith as you can — it adds bitterness you do not want here.

Add the spinach to the blender first, then the lemon, lime, banana, orange juice, rapeseed oil, salt, honey, whey protein, creatine, and matcha.

Blend on high until completely smooth — at least 60 seconds. The spinach needs a full blend to break down properly. If the texture is too thick, add a splash more orange juice and blend again.

For the foam: stir the vanilla powder into the cold oat milk until dissolved, then cold-froth using the Nespresso Aeroccino on the cold setting. You want a light, airy foam — not warm.

Pour the smoothie into glasses, filling them about three-quarters of the way.

Spoon the cold vanilla oat milk foam gently over the top, scatter a small handful of edible flowers across the foam, and serve immediately.

Why it works

Matcha: Matcha contains L-theanine — an amino acid that promotes calm, focused alertness by increasing alpha brain wave activity. Unlike coffee, which delivers a sharp caffeine spike, matcha provides a slower, more sustained release of caffeine combined with the calming effect of L-theanine. The result is alert without anxious, focused without wired. Matcha is also rich in EGCG — a catechin antioxidant that supports metabolic function, reduces inflammation, and has been studied for its role in fat oxidation. Ceremonial grade matcha has the highest concentration of these compounds.
Spinach: Spinach is one of the most nutrient-dense leafy greens available. It is rich in iron, magnesium, folate, and vitamins C and K. Magnesium is required for over 300 enzymatic reactions in the body, including energy production, muscle function, and the regulation of the stress response. Folate supports the production of serotonin and dopamine. Banana: Banana provides natural creaminess, body, and sweetness without any dairy or added sugar. It is rich in potassium, which supports healthy nerve function and helps regulate the stress response. The tryptophan in banana is a precursor to serotonin, and the vitamin B6 required for that conversion is also present in the fruit — making the two nutrients work together directly. The natural sugars in banana provide a fast, accessible energy source that the brain can use immediately.
Whey protein: Whey protein is a complete protein containing all nine essential amino acids. It is the fastest-absorbing protein available, reaching the muscles within 30–60 minutes of consumption. It directly stimulates muscle protein synthesis via leucine, supports neurotransmitter production, and contributes to satiety — meaning the energy from this smoothie lasts longer than the citrus and banana alone would provide.
Creatine: Creatine is best known as a performance supplement, but its cognitive effects are well-documented. The brain uses creatine phosphate as an energy reserve — supplementing creatine increases the brain's available energy supply, which has been shown to improve working memory, reduce mental fatigue, and support mood. A 2022 meta-analysis found that creatine supplementation significantly improved cognitive performance in tasks requiring short-term memory and reasoning. It is not just a muscle supplement.
Raw honey: Raw honey provides natural sugars — primarily fructose and glucose — that the brain can use as an immediate energy source. Unlike refined sugar, raw honey also contains trace minerals, enzymes, and antioxidants that support overall metabolic function. The glucose in honey supports the release of serotonin in the brain. Two teaspoons is a measured dose — enough to sweeten and support without spiking blood sugar sharply.
Oat milk and vanilla foam: Oat milk provides beta-glucan — a soluble fibre that slows the absorption of the natural sugars in this smoothie, moderating the energy curve and preventing a sharp blood sugar spike. Mocha Banana Protein Smoothie

Not everyone wakes up on the bright side. I did — but not everyone in this house did. And when the energy in a room is low before the day has even started, you can either leave it or do something about it. I had just come back from a yoga restore class. I went to the kitchen.

This smoothie was made for the house. Two glasses, one for each of them. Banana for the potassium and the mood — there is a reason bananas are one of the most studied foods for serotonin support. Coffee for the lift. Protein and creatine because the body needs something to work with, not just something to feel. Honey because it is always honey. Cocoa because it tastes like something you actually want to drink. And a cold oat milk foam on top dusted with pumpkin spice, because it is autumn and because it looked beautiful and because sometimes that matters.

I will write a proper post about my morning, to which I woke up happy and light. This is very unusual. But I for ones was the one to carry the morning with a light body and soul filled with love — and could care for the ones that did not wake up on bright side. For now, this is the smoothie I served. (One could think I think a smoothie can solve everything thing 🤣- I don't, please believe me) The smoothie worked some. That is enough.

The recipe, step by step

What you'll need

2 ripe bananas
½ cup brewed coffee — one Nespresso cup, cooled slightly
Oat milk — enough to fill the blender to your preferred consistency (roughly ¾–1 cup)
1 scoop whey protein powder
1 scoop creatine
¼ teaspoon Himalayan pink salt
2 teaspoons raw honey
1 tablespoon Hershey's cocoa powder
A small drizzle of rapeseed oil
For the foam: oat milk, cold-frothed
To finish: a dusting of pumpkin spice

How to make it

Brew your Nespresso and let it cool for a few minutes — you do not want to add boiling liquid to the blender with the protein powder.

Add the bananas, cooled coffee, oat milk, whey protein, creatine, salt, honey, and cocoa powder to the blender.

Blend until completely smooth. The banana gives you a thick, creamy base — if it is too thick, add a splash more oat milk and blend again.

While the smoothie is blending, cold-froth a small amount of oat milk using the Nespresso Aeroccino on the cold setting. You want a light, airy foam — not warm.

My oldest daughter came home to spend the night. She is a singer, and her throat was starting to feel off — a scratch, a warning sign, the kind of thing you cannot ignore when you have a performance coming at the weekend. So I went to the kitchen this morning.

Every ingredient in this glass has a reason. The whole lemon goes in peel and all — that is where the vitamin C is concentrated, and vitamin C is what the immune system reaches for first when a threat arrives. The lime adds another layer of citrus and its own antimicrobial compounds. The honey coats the throat directly — raw honey has been used for sore throats for centuries and the research backs it up. The Himalayan salt draws out inflammation and the capsaicin in the chilli gets the circulation moving, which is exactly what a tired, scratchy throat needs. The spinach and matcha are there because she needed nourishment, and a boost, not just comfort. (Matcha have the same effect on her as coffee)

The pitaya turns purple in the oat milk — the anthocyanins in the pitaya react with the oat milk and shift the colour. It is still beautiful. A purple cloud over deep green, the foam settling and bleeding at the edges. She took one look at it and named it: Purple Haze. That is the name. I aimed to make it look beautiful, because she deserved something beautiful. Because she is beautiful 🩶 and she has an important weekend ahead.

What you'll need

1 apple — cored, roughly chopped
1 whole seedless lemon — including peel
1 lime — peeled
1½ cups baby spinach
1 cup water
2 tablespoons raw honey
1 teaspoon matcha powder
½ teaspoon Himalayan pink salt
½ teaspoon chilli flakes
Ice, to taste
For the foam: ⅓ cup Oatly Barista oat milk (or homemade oat milk)

How to make it

Blend on the smoothie setting. Run the cycle twice — the first pass breaks everything down, the second builds the texture and fully breaks down the lemon peel. Blend until the base is completely smooth and deeply green.

While the green base is blending, make the foam. Stir the pink pitaya powder into the cold oat milk until fully dissolved — no streaks. The pitaya will turn a soft purple in the oat milk rather than pink; that is the colour you are working with.

Use the Nespresso Aeroccino on the cold froth setting to whip the purple oat milk into a light, airy foam.

Pour the green smoothie into your glasses, filling them about two-thirds of the way.

Spoon half the purple foam gently over the green — let it settle and begin to sink into the surface.

Why it works

Whole seedless lemon: Blending the whole lemon — peel and all — gives you far more than the juice alone. This is a training day smoothie as well as a restorative one if your body needs to rest to heal to restore. Water, cucumber, spinach, a few arugula leaves, apple, lemon zest, creatine, vanilla whey protein, raw honey, Himalayan salt, rapeseed oil, and ice. Nothing complicated. Everything intentional.

The base is light — water and cucumber rather than juice or milk — which keeps it clean and easy to drink before or after a workout. The apple adds a gentle natural sweetness and body without making this heavy. The spinach and arugula add the greens without making this taste like a salad. Just a few arugula leaves give the smoothie a quiet peppery note that works against the sweetness of the honey and the brightness of the lemon.

The creatine and whey protein go in together. Creatine is flavourless and dissolves completely — you will not taste it. The whey adds the protein without changing the texture. Both blend clean.

The lemon zest is the detail that lifts this above a standard green smoothie. Just the outer yellow peel — no white pith, no bitterness. The zest is where the flavonoids are concentrated, and it adds brightness without any harsh edge.

This one came from today. Cucumber, avocado, a whole seedless lemon, orange juice, raw honey, ground ginger, Himalayan salt, a pinch of crushed chilli, rapeseed oil, and vanilla whey protein. No greens powder. No foam layer. Just the ingredients, blended until smooth.

The avocado is what makes it. It gives the base a creaminess that feels more like a meal than a drink — thick, cool, and satisfying in a way that lighter smoothies are not. The cucumber keeps it fresh and hydrating. The whole lemon adds brightness without sharpness. The honey rounds everything off. And the ginger and pinch of crushed chilli at the end are the details that make it interesting — a warmth that builds quietly and stays.

This is the Power of the Earth smoothie rebuilt for recovery. Everything that made the original work is still here — the whole lemon, the spinach, the matcha, the blue spirulina foam — but the lime has been swapped for half a frozen mango, which adds a natural tropical sweetness and a thicker, creamier body to the green base. Then a scoop of vanilla whey protein and a scoop of creatine go straight into the blend.

You do not taste the protein or the creatine. They dissolve into the liquid and disappear behind the lemon, mango, and matcha. What you get is a drink that looks exactly like the original — deep green base, blue spirulina foam on top — but with a post-workout nutritional profile built into every sip.

The rapeseed oil is still in there. It rounds out the flavour, helps your body absorb the fat-soluble vitamins from the spinach and matcha, and gives the whole thing a subtle richness. The frozen mango means you need less ice, and the result is a slightly thicker, more substantial drink than the original.

Protein Pancakes

These pancakes started as the classic batter. The girls made this post double class workout and served big sister too when she stopped by later. Half a cup of protein powder goes straight into the batter alongside the wheat flour, and you would not know it was there from the texture. They come out just as thin and golden as they always did, but with a protein profile that actually makes them a meal.

The rapeseed oil goes into the batter and into the pan. It keeps everything light, does not overpower the flavour, and handles the heat without burning. Whisk it all together, let it rest for five minutes, and fry them one at a time. The first one is always the test pancake. By the second, you have the heat right.

What you'll need

3 large organic pasture-raised eggs
6 dl (a little more than 2 cups) whole milk
1¼ dl (½ cup) organic wheat flour
½ cup protein powder
2 tablespoons rapeseed oil — plus a little extra for the pan
A pinch of Himalayan pink salt

How to make it

Crack the eggs into a large mixing bowl and whisk until the yolks and whites are fully combined.

Add the salt, rapeseed oil, and about half the milk. Whisk in the wheat flour and protein powder gradually, alternating between the two, until the batter is smooth and lump-free. Pour in the remaining milk and whisk again until you have a thin, even batter.

Let the batter rest for 5 minutes. This gives the flour time to hydrate and the protein powder to fully incorporate, which makes the pancakes more tender and easier to flip.

Heat a non-stick frying pan over medium heat. Add a very small amount of rapeseed oil and swirl to coat the base. Pour in just enough batter to thinly cover the pan — tilt as you pour so it spreads into a wide, even circle.

Cook for 1–2 minutes until the edges look set and the surface is no longer wet. Flip and cook for another 30–60 seconds until lightly golden. Slide onto a plate and repeat with the remaining batter.

This is the omelette I make on the days I have actually done the work — a weight session, a ride class, something that asked something of the body. Four eggs give you a serious hit of complete protein and keratin-supporting amino acids. Chopped tomatoes and green bell pepper on top keep it fresh and add a little colour and vitamin C to help with absorption. It is fast, it is filling, and it is exactly what the body needs after it has been pushed.

What you'll need

4 large organic pasture-raised eggs
2 tablespoons extra-virgin olive oil
A pinch of Himalayan pink salt

Why it works

What you'll need

1 seedless lemon — whole, including peel
1 white nectarine — stone removed, roughly chopped
1 generous handful fresh spinach
1 cup freshly pressed orange juice
A pinch of chili flakes
A pinch of ground ginger
A pinch of Himalayan pink salt
1 tablespoon extra-virgin olive oil
Honey, to taste
Ice, to taste

Watermelon with Some Fire is for the ones who like a little adventure in their glass — sweet and cooling from the watermelon, bold and bright from the whole lemon and lime, warm and lively from the ground ginger and chili flakes, and finished with the most unexpected whisper of fresh rosemary.

The whole lemon — peel and all — is the move that makes this recipe. It adds a slightly bitter, deeply citrusy depth that you simply cannot get from juice alone. The Himalayan salt pulls everything together, and the honey rounds out the heat. Two or three fresh rosemary leaves is all you need. More, and the herb takes the wheel.

Fall Veal Stew with Buckwheat

This is a generous, slow-cooked fall stew built from the cozy recipe that inspired me, with everything increased by one-third and made in the way it worked in my own kitchen: red onion instead of yellow, fresh thyme leaves instead of dried, and buckwheat alongside it.

The apple is entirely optional, but worth trying if you enjoy a little sweetness against savory gravy. I added it near the end so it held its shape. Next time I may let it cook a little longer, though the late addition was better for family members who did not want a very soft apple.

My KitchenAid made the dough beautifully, but because I did not have the pasta attachment yet, I rolled the dough myself and cut the tagliatelle by hand. It takes patience to get the ribbons very thin that way, which is exactly why a pasta roller is on my list. I served this pasta with a meat sauce, which I will share as a separate recipe later. Either way, the result is worth it: fresh pasta that your family can make their own.

1 Kilner wide mouth 0.2 litre jar (or a cup-size jar)
2/3 to 3/4 jar of Laura's Gourmet Blueberry Bliss Crunch Granola
2 teaspoons of Wild Mountain 100% Raw Honey
Cold drinking water, filtered or fresh — enough to fill the jar
Simply Organic Ground Ceylon Cinnamon or Ground Ginger — optional, for a warm finishing touch

How to make it

Fill your jar about 2/3 to 3/4 of the way with the granola.

Squeeze in 2 teaspoons of raw honey.

Fill up the rest of the jar with cold drinking water.

Stir well so the honey dissolves and everything mixes together.

Let it sit for 10 minutes, then stir once more.

Put the lid on and leave it in the fridge overnight. Breakfast is ready when you wake up.

Pan-Seared Salmon with Buckwheat & Garden Salad

A few evenings ago, dinner came together in the simplest, loveliest way: salmon in the skillet, buckwheat gently steaming, and a salad that needed little more than lemon and olive oil.

This is the kind of plate that feels complete without being fuzzy. Every piece has its place, and a lemon wedge at the table is the finishing touch.

What you'll need

2 salmon fillets
1 cup buckwheat groats, rinsed
2 cups water or broth
2 generous handfuls mixed salad greens
A handful of cherry tomatoes, halved
A handful of alfalfa sprouts
1 lemon, cut into wedges
2 fresh rosemary sprigs (or 1 teaspoon dried rosemary)
Extra-virgin olive oil
White wine vinegar
Garlic salt and freshly ground black pepper, to taste

How to make it

Clean the buckwheat groats in a PurePod bath, then rinse. Bring the buckwheat and water or broth to a boil. Reduce to a gentle simmer, cover, and cook until tender and the liquid is absorbed, about 15 minutes. Fluff with a fork.

Use a fresh PurePod bath to clean the lemon, fresh rosemary, salad greens, and alfalfa sprouts, then prepare them for the recipe.

Pat the salmon dry, then season both sides with garlic salt and freshly ground black pepper before searing.

Warm a little olive oil in a skillet over medium heat. Sear the salmon until golden, then add the fresh rosemary to the pan and continue cooking until the salmon is cooked through to your liking, about 4 to 5 minutes per side depending on thickness. If you do not have fresh rosemary, the dried rosemary from my pantry is a good alternative.

Toss the greens, alfalfa sprouts, and tomatoes with a drizzle of olive oil and white wine vinegar.

Divide the warm buckwheat, salad, and salmon between two plates. Finish by squeezing fresh lemon over the salmon and buckwheat.
