Homemade Protein Dense Whole Wheat Pasta

September 3, 2026

This is the kind of pasta I reach for when I want a homemade meal that has a little more substance. The combination of whole wheat flour, eggs, and olive oil makes a dough with a lovely nutty flavour and a satisfying, hearty bite.

My KitchenAid made the dough beautifully, but because I did not have the pasta attachment yet, I rolled the dough myself and cut the tagliatelle by hand. It takes patience to get the ribbons very thin that way, which is exactly why a pasta roller is on my list. I served this pasta with a meat sauce, which I will share as a separate recipe later. Either way, the result is worth it: fresh pasta that your family can make their own.

What you'll need

  • 1½ cups whole wheat flour
  • ¾ cup all-purpose flour
  • 4 large eggs
  • 4 teaspoons olive oil
  • 4 to 5 tablespoons water, as needed
  • ½ teaspoon Natierra Himalania Himalayan Fine Pink Salt, plus pasta water for boiling

How to make it

  1. 1

Add the whole wheat flour, all-purpose flour, and ½ teaspoon salt to the bowl of a KitchenAid stand mixer. Whisk briefly to combine, then make a small well in the centre.

  2. 2

Add the eggs and olive oil to the well. Fit the dough hook and mix on low until a shaggy dough begins to form. Add the water 1 tablespoon at a time, only until the dry flour comes together.

  3. 3

Knead with the dough hook on low to medium-low for about 8 to 10 minutes, until the dough is smooth, firm, and springy. If it is sticky, add a little flour; if it is crumbly, add a few drops of water.

  4. 4

Shape the dough into a ball, cover, and let it rest at room temperature for 20 to 30 minutes. This gives the flour time to hydrate and makes the dough easier to roll.

  5. 5

Divide the dough into 4 pieces. With a rolling pin, roll one piece at a time on a lightly floured surface as thinly as you can. Fold it loosely or dust it with flour, then cut into tagliatelle-style ribbons by hand. I made mine by hand because I did not yet have the pasta attachment; a KitchenAid pasta roller and cutter makes it much easier to achieve thin, even ribbons.

  6. 6

Bring a large pot of water to a gentle boil and salt it to taste. If you prefer a saltier dough, add a little more salt to the dough next time and use less in the pasta water.

  7. 7

Cook the pasta according to its thickness. Start tasting after 4 minutes. My hand-cut ribbons were quite thick and rose a little in the boiling water, so I cooked them for about 10 minutes for the al dente texture my family enjoys. Drain and serve with your favourite sauce.

Whole-grain pasta benefits

  • Fresh pasta cooks by feel, not only by the clock. Thin ribbons will cook quickly, while thicker hand-cut pasta needs more time.
  • Whole wheat flour brings a nuttier flavour and more fibre than refined flour. Together with four eggs, this pasta offers a satisfying mix of carbohydrates and protein as part of a balanced meal.
  • Ingredient highlights: whole wheat flour supplies fibre and naturally occurring minerals; eggs contribute protein and nutrients such as choline; and olive oil adds unsaturated fat and a tender texture. This is a hearty pasta option for active families who enjoy a filling homemade meal.
