The Lunch My Daughter Made in a Heartbeat

September 2, 2026

Some of the best lunches are not planned at all. This one came together because my daughter knew exactly what to reach for: cold salmon, a handful of spinach, a ripe tomato, and lime.

It is proof that a tight schedule does not have to mean a forgettable lunch. Keep a little leftover salmon, wash your greens, and lunch can be on the table before the day gets away from you.

What you'll need

  • Cold leftover cooked salmon, flaked
  • A generous handful fresh spinach
  • 1 ripe tomato, chopped
  • Freshly pressed lime juice, to taste
  • A small pinch of Himalayan salt
  • Freshly ground black pepper, to taste

How to make it

  1. 1

Wash the spinach, tomato, and lime, then dry the spinach and chop the tomato.

  2. 2

Arrange the spinach on two plates, then spoon the chopped tomato over the top.

  3. 3

Flake the cold leftover salmon over the salad.

  4. 4

Finish with fresh lime juice, a small pinch of salt, and plenty of freshly ground black pepper. Serve right away.
