Matcha Apple Ginger Smoothie

September 27, 2026

My daughter asked me to go back to fresh ginger. So today's smoothie has that. But one can still use the ginger spice, if you don't have fresh ginger at home. The matcha and ginger together give it an edge — not sharp, just present. The kind of flavour that wakes you up before the protein even has a chance to. I use one whole apple: half goes into the blender, the other half I slice thin and fan over the rim of the glasses, with the rest on a small plate alongside. It is a small thing, but it makes the whole glass look considered — and it gives you something to nibble while you drink.

The ginger is the detail that makes it. Scrape the skin off with a spoon, slice it thinly across the grain, and the blender does the rest. Cut it the wrong way and you get threads. Cut it across the fibres and it disappears into the blend — all the warmth, none of the texture.

Blend it 3–4 times, stopping between each pass. That is what gives you the fluffy, creamy result rather than something that just tastes blended. The cinnamon on top is the last thing — it blooms in the first sip and makes the whole glass smell like something worth sitting down for.

The recipe, step by step

Fresh ginger scraped with a spoon and sliced thinly across the grain on a white board
Scrape with a spoon, slice across the grain — no threads, all flavour
Apple slices, spinach, matcha and crushed pepper loaded into the blender bowl
Everything in — blend 3–4 times for that fluffy, creamy texture
Two tall glasses of matcha apple ginger smoothie with cinnamon dusting and apple slice garnish
Dust with cinnamon just before serving — it blooms in the first sip

What you'll need

  • 1 lemon, peeled
  • 1 lime, peeled
  • ¼ teaspoon Himalayan pink salt
  • 1 large apple, cored — skin on (half blended in, half sliced for garnish and snacking)
  • 1 tablespoon cold-pressed rapeseed oil
  • 2 teaspoons ceremonial grade matcha
  • 1 inch fresh ginger, scraped and thinly sliced
  • 1½ cups (45 g) fresh baby spinach, rinsed (even if the bag says pre-washed)
  • 1½ cups (360 ml) organic orange juice
  • 2 scoops whey protein powder
  • 1 scoop creatine powder
  • Ice — a generous handful
  • A pinch of crushed red pepper
  • 2 teaspoons raw honey
  • Ground cinnamon, to finish
  • The other half of the apple, sliced thin — to garnish the glasses and serve alongside as a snack

How to make it

  1. 1

Wash all your produce before you start — the lemon, lime, apple, ginger, and spinach. Even pre-washed spinach bags should be rinsed again; the bag label tells you it has been washed, but it has been sitting in a bag since it was packed. A quick rinse under cold water takes seconds and it matters. The PurePod produce cleaner is what I use — it removes pesticide residue, wax, and surface bacteria that water alone does not shift.

  2. 2

Peel the lemon and lime. Add them to the blender with the orange juice — the liquid goes in first to give the blades something to work with.

  3. 3

Add the spinach, apple (skin on), rapeseed oil, Himalayan salt, crushed pepper, honey, matcha, whey protein, creatine, and ice.

  4. 4

Prepare the ginger: scrape the skin off with a spoon — it comes away easily and wastes nothing. Slice it thinly across the grain rather than lengthways. This is the key step: cutting across the fibres means the blender breaks them down completely, so you get all the ginger flavour with none of the long stringy threads. Add the slices to the blender.

  5. 5

Blend on high. Stop, scrape down the sides, and blend again. Repeat 3–4 times in total — this is what makes it fluffy and creamy rather than just smooth. Each blend incorporates more air and breaks down the fibres further.

  6. 6

Pour into glasses. Dust generously with ground cinnamon. Fan the remaining half of the apple into thin slices and drape a few over the rim of each glass — the rest go on a small plate alongside as a snack. Serve immediately.

Why it works

  • Matcha: Ceremonial grade matcha provides L-theanine alongside its caffeine — a combination that gives you focused, calm energy rather than the spike and crash of coffee. It is also rich in EGCG, one of the most studied antioxidants in green tea, with well-documented anti-inflammatory and metabolic benefits.
  • Fresh ginger: Fresh ginger contains gingerols and shogaols — active compounds with potent anti-inflammatory and antioxidant properties. It supports digestion, reduces nausea, and adds a warmth that lifts the whole smoothie. Slicing it thinly across the grain ensures the blender extracts the full flavour without leaving threads.
  • Spinach: Baby spinach is one of the most nutrient-dense greens you can add to a smoothie. It provides iron, folate, magnesium, and vitamins K and C — and it blends in completely, contributing colour and nutrition without any grassy flavour.
  • Lemon and lime: Both citrus fruits provide vitamin C, which significantly improves the absorption of non-haem iron from the spinach. The citric acid supports kidney health, and the flavonoids in the peel — if you blend the whole fruit — have well-documented anti-inflammatory properties.
  • Rapeseed oil: One tablespoon of cold-pressed rapeseed oil blends in completely and adds meaningful nutritional value. Rapeseed oil has one of the best omega-3 to omega-6 ratios of any cooking oil, and the fat it provides helps your body absorb the fat-soluble vitamins and antioxidants from the spinach and matcha.
  • Whey protein: Two scoops of whey protein and one scoop of creatine across the full batch. The whey adds around 40–50 grams of protein — roughly 10–13 grams per serving. The creatine supports strength and recovery without changing the flavour at all. Together they make this genuinely functional as a post-workout drink or a high-protein breakfast.
  • Honey: Raw honey provides natural sugars for quick energy alongside trace enzymes, antioxidants, and antimicrobial compounds. Two teaspoons across four servings is a modest amount — enough to round out the citrus without making the smoothie sweet.
