Lime & Lemon Spinach Matcha Smoothie

October 5, 2026

This one came together the way the best smoothies do — from what was on the counter and what the body was asking for. Lime and lemon together give it a brightness that orange juice alone cannot. The spinach disappears completely into the green, and the matcha adds that calm, focused layer underneath the citrus. Fresh ginger is non-negotiable here. Ground ginger is a different ingredient entirely — it is warm and dry where fresh ginger is sharp and alive.

The cold foam is the finishing touch that makes this feel like something you would order rather than something you made at home. Half a cup of organic milk, a teaspoon of vanilla sugar, frothed cold until it is light and airy, then spooned over the top. It sits on the surface and melts slowly into the smoothie as you drink. The lime slices on the rim are not decoration — they are a small snack alongside.

The recipe, step by step

Fresh ginger scraped with a spoon and sliced thinly across the grain on a white board
Scrape with a spoon, slice across the grain — no threads, all flavour
Two tall glasses of lime lemon spinach matcha smoothie with cold vanilla foam and lime slice garnish, side view
Two batches of cold foam for four to five glasses — the cold foam goes on just before serving

What you'll need

  • 1 lime, peeled (plus extra slices for garnish)
  • 1 lemon, peeled
  • 2 cups (60 g) fresh baby spinach, rinsed
  • 1⅓ cups (320 ml) organic orange juice
  • 1 inch fresh ginger, scraped and thinly sliced across the grain
  • 2 teaspoons raw honey
  • ¼ teaspoon Himalayan pink salt
  • A pinch of crushed chilli pepper
  • 1½ teaspoons ceremonial grade matcha
  • 1½ tablespoons cold-pressed rapeseed oil
  • 3 scoops whey protein powder
  • 2 scoops creatine powder
  • Ice — a generous handful
  • Cold foam (2 batches): ½ cup (120 ml) organic whole milk + 1 teaspoon vanilla sugar per batch, frothed cold

How to make it

  1. 1

Wash all your produce before you start — the limes, lemons, ginger, and spinach. Even pre-washed spinach bags should be rinsed again; the bag label tells you it has been washed, but it has been sitting in a bag since it was packed. A quick rinse under cold water takes seconds and it matters. The PurePod produce cleaner is what I use — it removes pesticide residue, wax, and surface bacteria that water alone does not shift.

  2. 2

Prepare the ginger: scrape the skin off with a spoon — it comes away easily and wastes nothing. Slice it thinly across the grain rather than lengthways. This is the key step: cutting across the fibres means the blender breaks them down completely, so you get all the ginger flavour with none of the long stringy threads.

  3. 3

This recipe makes two batches. For each batch: peel one lime and one lemon and add them to the blender with half the orange juice — the liquid goes in first to give the blades something to work with. Add half the spinach, half the ginger slices, half the rapeseed oil, half the salt, half the crushed chilli, half the honey, and ¾ teaspoon of the matcha.

  4. 4

Add half the whey protein, half the creatine, and a generous handful of ice. Blend on high. Stop, scrape down the sides, and blend again. Repeat 3–4 times in total — this is what makes it fluffy and creamy rather than just smooth. Each blend incorporates more air and breaks down the fibres further.

  5. 5

Pour the first batch into glasses, then repeat the entire process for the second batch. This recipe serves 4–5 — two full blender loads gives you enough for everyone.

  6. 6

Make the cold foam: pour the organic milk and vanilla sugar into the Aeroccino or a cold-froth capable frother. Use the cold-froth setting. Froth until light and airy — it takes about 60 seconds. Spoon gently over the top of each glass.

  7. 7

Slice the reserved limes thin and place a slice on the rim of each glass. Serve immediately — the foam is best in the first few minutes.

Why it works

  • Matcha: Ceremonial grade matcha provides L-theanine alongside its caffeine — a combination that gives you focused, calm energy rather than the spike and crash of coffee. It is also rich in EGCG, one of the most studied antioxidants in green tea, with well-documented anti-inflammatory and metabolic benefits.
  • Fresh ginger: Fresh ginger contains gingerols and shogaols — active compounds with potent anti-inflammatory and antioxidant properties. It supports digestion, reduces nausea, and adds a warmth that lifts the whole smoothie. Slicing it thinly across the grain ensures the blender extracts the full flavour without leaving threads.
  • Spinach: Baby spinach is one of the most nutrient-dense greens you can add to a smoothie. It provides iron, folate, magnesium, and vitamins K and C — and it blends in completely, contributing colour and nutrition without any grassy flavour.
  • Lime and lemon: Both citrus fruits provide vitamin C, which significantly improves the absorption of non-haem iron from the spinach. The citric acid supports kidney health, and the combination of lime and lemon gives a brightness that is sharper and more complex than either alone.
  • Rapeseed oil: Two tablespoons of cold-pressed rapeseed oil blends in completely and adds meaningful nutritional value. Rapeseed oil has one of the best omega-3 to omega-6 ratios of any cooking oil, and the fat it provides helps your body absorb the fat-soluble vitamins and antioxidants from the spinach and matcha.
  • Whey protein and creatine: Three scoops of whey protein and two scoops of creatine across two batches. The whey adds around 60–75 grams of protein — roughly 12–15 grams per serving. The creatine supports strength and recovery without changing the flavour at all. Together they make this genuinely functional as a post-workout drink or a high-protein breakfast.
  • Cold vanilla foam: Organic whole milk frothed cold with vanilla sugar. The fat in whole milk gives the foam body and staying power — it sits on the surface and melts slowly into the smoothie rather than dissolving immediately. Vanilla sugar adds a gentle sweetness that rounds out the citrus without competing with it.
