Herb-Seared Chicken with Apple-Walnut Salad

August 27, 2026

This is the kind of dinner that feels complete without being complicated: warm, herb-seasoned chicken, simple broccoli, and a fresh salad with a little sweetness and crunch.

The apple, walnuts, and truffle oil make this recipe a quiet greeting to fall. Truffle is a mushroom, and its earthy flavour adds a gentle touch of luxury to the crisp sweetness and crunch of the salad. The chicken keeps the plate grounded and satisfying, making this an easy weeknight dinner worth sitting down for.

What you'll need

  • Boneless, skinless chicken breasts or thighs — 2 servings
  • Olive oil — for searing and roasting
  • Fresh herbs, or Simply Organic Whole Rosemary Leaf, Whole Thyme Leaf, or Oregano — used while the chicken cooks
  • Simply Organic White Pepper and Garlic Salt — for seasoning the chicken before searing
  • Broccoli florets — 1 small head
  • Washed broccoli stems — save after trimming for another meal
  • Salt — for the broccoli
  • Mixed greens or romaine — for the salad
  • Crisp apple — thinly sliced
  • Walnuts — roughly chopped
  • TRUFF Black or White Truffle Oil — drizzled over the salad
  • Your favourite simple vinaigrette — to taste

How to make it

  1. 1

Pat the chicken dry and season both sides with white pepper and garlic salt before searing.

  2. 2

Heat olive oil in a skillet over medium-high heat. Sear the chicken until golden on both sides, then lower the heat, add the fresh herbs, and cook through until the centre reaches 165°F.

  3. 3

Trim the broccoli, wash the stems, and save them for another meal. Steam the florets until tender with a little bite, then season simply with salt. Save the steaming water in a covered container in the refrigerator to use the next day.

  4. 4

Build the salad with greens, sliced apple, and walnuts. Dress lightly with vinaigrette, then finish with a drizzle of truffle oil just before serving.

  5. 5

Let the chicken rest for a few minutes, slice if you like, and serve alongside the broccoli and apple-walnut salad.
