Organic Shallot, 1 each
The shallot I use in the Quick Chicken Burrito. Slice it as thinly as you possibly can — almost translucent. Super-thin slices mellow quickly and add a gentle sweetness rather than a sharp bite. A mandoline is ideal, but a sharp knife and patience gets you there.
