Herb-Roasted Root Vegetables

Root vegetables are one of my love languages. They're humble, inexpensive, and when you roast them properly — high heat, single layer, don't touch them — they transform into something almost magical.

This is my go-to for Sunday meal prep. I make a double batch and use them all week: alongside eggs in the morning, tossed into grain bowls at lunch, or as a simple side at dinner.

The key is patience. Let them sit undisturbed for the first 15 minutes so they can develop that gorgeous caramelized crust. Resist the urge to stir.

What you'll need

  • 2 medium carrots, cut into 1-inch pieces
  • 2 parsnips, peeled and cut into 1-inch pieces
  • 1 medium sweet potato, cubed
  • 1 small red onion, cut into wedges
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary, crumbled
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for serving

How to make it

    Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment.

    Toss all the vegetables with olive oil, thyme, rosemary, salt, and pepper. Spread in a single layer — don't crowd them or they'll steam instead of roast.

    Roast for 25–30 minutes, flipping halfway through, until the edges are golden and caramelized.

    Scatter fresh parsley over the top and serve immediately.
